TUSCAN FALL SOUP
This one is a rendition of the Olive Garden Zuppa Toscana, but I think I like this even more!! It’s the perfect soup to cozy up with this Fall & Winter.
Ingredients:
1 yellow onion (chopped)
1 tbsp minced garlic
1 lb ground Italian sausage
(2) cartons of chicken broth (I used chicken bone broth which has even more nutrients)
6oz tomato paste
1-2 tbsp Italian seasoning (I like a lot) *you can also use fresh chopped sage + rosemary but I like easy so I just used all Italian seasoning*
sprinkle of crushed black pepper
(2) large sweet potatoes, cubed
(1) bag of fresh chopped kale
(1/2) box of small pasta- lused ditalini
⁃ 1/3 cup half&half (more if you want it creamier)
Directions:
Sauté onions + garlic until fragrant
add in sausage and cook through
Add chicken broth, Italian seasoning, black pepper, tomato paste & sweet potato chunks
Simmer until the potatoes are cooked, or longer
In the last 30 minutes, add kale, pasta & half and half
⁃ Top with grated parmesan
